Stainless steel is a popular choice for kitchen appliances because it is stain, rust and corrosion resistant which means stainless steel knives are likely to last for a long time. Stamped knives are created by a machine in a similar fashion to cookie cutters (think assembly line). The machine cuts the blade shape and then stamps it via a hydraulic press. The blades are thinner and the knives provide less balance and ease of use, but they are more affordable.
The handle is an important part of the blade as it effects how easy and comfortable the knife is to use. There are a few materials which are normally used for knives.
Plastic is a popular choice as it is affordable, plastic handles tend to last and they are easy to clean. The downside is that they tend to feel a little cheap.
Wooden handles are more attractive and they give the knife a more authentic appearance. Wood is also comfortable to hold and easy to use, but unfortunately wood is harder to clean and tends to be fairly high maintenance.
Stainless steel is a durable material which is very easy to clean, it is stain and corrosion resistant and, as the steel adds weight to the overall knife, they tend to balance their weight well and are easier to use as a result. Boning knives are specially designed to help you remove the bones in fish or meat or the meat from bones. These knives do not cut through bones.. You don’t need to buy a boning knife as it is possible to use a standard knife, but this can prove counterproductive, wasteful and sometimes even dangerous.
Why Buy A Boning Knife?
You can technically use a regular knife to de-bone meat, but specifically made boning knives can make the de-boning process a lot quicker, easier and safer. Boning knives come with extra-thin blades which speeds up the process, de-boning knives waste less meat and leave the cuts intact, and it is a lot easier to remove bones with a specific boning knife.
Tougher meats require a sharp, thin and stiff knife which allows for a high level of accuracy and precision. If the wrong knife is used it may be easier for the knife to slip which can obviously be very dangerous.
Softer and tender meat is easier to cut with a knife, but you will need a very precise and delicate hand as well as a thin blade in order to quickly and effectively remove the bones without ruining the cut. Boning knives which come with a curved blade are specifically designed to help you remove every last fish bone.
Types Of Boning Knife
There are two main types of boning knives to choose from.
- Stiff boning knives. Stiff knives are ideal for thicker cuts and tougher meats. They are not particularly flexible, but they are actually better suited for most type of meat.
- Flexible boning knives. Flexible boning knives are smaller, flexible and easier to control. These types of knives are ideal for poultry or fish but are not a great choice for red meat.
Most blades are around 5-6 inches long. The smaller a blade is typically makes the blade more flexible and they are a better choice for more delicate meats. You will be able to find larger blades, but unless you are a professional butcher you’re unlikely to actually use it as much.

It’s a good idea to look for a non-slip handle because, as the name suggests, these handles are less likely to slip from your hand and cause injury. If you are de-boning a lot of meat your fingers will naturally become slippery and you want a blade that protects against that rather than adds to it. The Three Virtues
The word ‘Santoku’ means ‘three virtues’ and refers to the three main uses of this knife, i.e. chopping, slicing and dicing. Santoku knives are similar to multi-functional chef’s knives but their techniques vary and many people recommend santoku knives over other products. Santoku knives are ideal for very thin slices (including garnishes) and they can be a bit difficult to get used to and become comfortable with, but once you maser the skills you may well find that your santoku knife becomes an all time favourite.
Any decent Santoku knife should come with a sharp, thin blade to help it pierce through tough skins. These knives are known for their ability to cut extra thin slices and it is essential that they come with a thin blade to help you achieve this.
The angle of the blade is important. You will need to find a blade which has an angle of less than 15 degrees and if possible try to find something under 15 degrees. Santoku knives are popular and so there are unfortunately a lot of rip off’s on the internet. Your Santoku knife should be made out of good quality strong steel with a sturdy blade. You will find blades which are made out of high-carbon steel or stainless steel and both materials come with their own pros and cons. High-carbon blades provide extra strength and are easier to sharpen, but stainless steel is easier to clean and less likely to rust. If you have money to spare consider paying a bit more for a knife that has been made by forging rather than machinery as these knives tend to be extra strong.
Ceramic knives are known for their sharpness and sturdiness, but they are quite brittle and likely to break so it is not recommended that you buy a ceramic Santoku knife.
Santoku knives are known for their dimpled edges. These dimples are known as hollow edge blades and they create an anti-suction effect which effectively stops food from sticking to the knife. This is important because you are likely to be chopping a lot of vegetables which may stick to the knife and these hollow edges will save you having to wipe the blade clean every time something gets stuck to it.
Japanese knives are made from multiple laers of steel. The amount of layers will vary and they could be as little as two to as many as 30+. Multiple types of steel may be used but there will normally be a hard steel core and softer, tougher steel on the surface. These types of blades are normally forged and this is how they are able to display the popular damascus or sumingashi steel patterns.
The handle shape and size is an important consideration no matter which knife you choose to buy. If you are uncomfortable with your knife it will naturally be harder to use and despite any superior materials or extra sharpness it will be unable to give great results. You will need to consider the shape and size of the handle to make sure it will fit nicely in your hand and you will be able to use it over an extended period of time.
The material is also important both in regards to cleaning (wood is harder to clean, plastic is easier but less attractive, and stainless steel is easy to clean but tends to become slippery) and anti-slip properties as these knives tend to be very sharp and you don’t want to risk dropping them on your feet.
Other Japanese Knives
Santoku knives are a great multi-purpose choice, but there are other options which you may want to learn about.
Gyuto knives are similar to the standard chef’s knife and they are ideal for preparing raw fish and meat. They come with a curved edge which allows you to chop in a rocking motion for easy and quick preparation.
Sashimi knives are mainly used for the preparation of raw fish. These knives come with fine, sharp edges and a flat back which makes it easier to support the knife whilst cutting. These knives are a great alternative to the carving knife if you are planning on cooking a lot of meat, but they may not be as useful for a vegetarian kitchen.
Usuba translates to ‘thin knife; and it is commonly used for finely slicing vegetables and fruit. It is ideal for improving your foods appearance and slicing softer foods such as tomatoes without squashing them. There is no need to buy a mandolin if you have a Usuba knife.
Deba knives are another fish-specific knife which is used to clean and prepare the fish. The word ‘deba’ means ‘pointed knife’ and so these knives have an extra sharp point. Deba knives also have a flat back a curved tip, a curved spine and a thicker blade. These knives are ideal for cutting through bones (e.g. when cutting the fishes head off) and they are also a great choice for preparing meat.
Electric knives are really helpful if you need to cut a lot of meat and/or bread. They require less effort because the electricity does a lot of the work for you, they are a lot faster than human hands alone, and electric knives tend to be more precise ad they can cut perfect slices every time. Electric knives are a great choice if you eat lot of meat and they are a good (if potentially costly) alternative to regular carving knives, but you are unlikely to whip out your electric knife simply to cut some vegetables.
Corded VS Cordless
Cordless knives are not restricted by trailing cords and electricity sockets so you will be able to carry them around and use them throughout the house. The downside is that cordless knives rely on battery power which means that they may run out whilst you still need to use them. Corded knives never run out of battery as they are attached to the electricity supply and so whilst they offer less flexibility they are more consistent.
Any electric knife will come with a carving blade, but not every model will come with a blade suitable for slicing bread. If you are planning on buying an electric knife it’s a good idea to make sure you can get as much out of it as possible so if you do want the option of slicing bread in the future try and find a model which includes a bread blade as part of the price. You will be able to buy a bread blade on its own, but that won’t be as cost effective.
Electric knives tend to vibrate in your hand and this can become quite painful if you are using the knife over an extended period of time. Try and look out for models which come with ergonomic handles so that you can use the knife easily and comfortably. In regards to safety it may also be a good idea to find a non-slip handle.
You will need to clean your electric knife blade just the same as any other kitchen appliance. Make sure that the blade is removable and check to see if the blade is dishwasher friendly to avoid any problems.
